Blueberry Streusel Muffins

When I was young we lived on Atwood Lake in Ohio and we had the most lovely neighbor, Mrs. Eberly.  This blueberry muffin recipe is hers but I added the streusal topping for more of a crunch.  Enjoy!

Muffin Recipe:
1/4 Cup Butter
1/2 Cup Sugar
1 Large Egg
3/4 Cup Milk
1/4 tsp Vanilla
1 3/4 Cup Flour
2 1/2 tsp Baking Powder
1/2 tsp Salt
1 Cup Blueberries (Can be frozen or fresh)

Streusel Topping:
3 Tablespoons Chilled Butter
1/2 Cup Sugar
1/4 Cup Brown Sugar
1/2 tsp Cinnamon

Preheat over to 425 degrees

To Make:
Cream butter and sugar together.  Then add all other ingredients except blueberries.  Batter will be lumpy.  The very last step is to add the blueberries.

Spray a muffin pan with non stick cooking spray or use the tin liners.  Fill each space about 3/4 of the way full with batter. 

To make streusel topping:
Mix the two sugars and cinnamon to blend then cut in the chilled butter until the mixture crumbles.  Top each muffin before baking.

Bake at 425 degrees for 25 minutes



Serve with butter and you have a great breakfast!

Frozen Peanut Butter Turtle Pie

I made this dessert for my mom's birthday yesterday. 
It was super easy and a {HUGE} hit!

1 8oz. package Cream Cheese, softened
1/3 Cup Creamy Peanut Butter
1/2 Cup Sugar
2 Cups thawed Cool Whip
1/4 Cup Carmel Ice Cream Topping
1 Oreo Pie Crust
1/4 Cup coarsely chopped Pecans (I also added some chopped peanuts)
2 Squares Baker's Semi Sweet Chocolate for drizzling

Beat cream cheese, peanut butter and sugar in large bowl with mixter until well blended.  Add Cool Whip; mix well.  Spread caramel topping onto bottom of crust; cover with cream cheese mixture.  Freeze for at least 4 hours.  Top with nuts just before serving and melt chocolate as directed on package; drizzle over pie.

Breakfast Vol-au-Vent

I have the best cookbook called "The American Country Inn and Bed & Breakfast Cookbook"! I have so many recipes marked to make and I'm slowly working my way through it. This was a recipe I made for dinner last night and wanted to share. Despite the fact that it's not very pretty it tasted {FAN}tastic! It was easy to make but it is several steps but worth it in the end.
1 Pound Bulk Pork sausage

1 medium onion, chopped
1 C celery, chopped
4 ounces mushrooms, sliced
1 to 2 tablespoons butter
***
1 103/4 oz can cream of mushroom soup
8 sliced hard boiled eggs
1 tablespoon chopped pimiento (I skipped this)
1 C milk

Salt and Pepper to tase

8 puff pastry shells
Cook, crumble and drain the sausage.

Saute the onion, celery and mushrooms in butter.

Add sausage, mushroom soup, pimiento and milk, stirring well over medium heat. Add sale and pepper to taste. Add the sliced eggs stirring gently until mixture is heated through. Keep warm.

Bake Pastry shells according to directions. Remove caps and reserve. Scopp out the center. Fill each pastry shell with the sausge and egg mixture--fill to overflowing. Replace caps and garnish as you wish. Serves 8

Yummy Fried Pickles!

I posted the other day about our trip to the Old Mill of Guilford so I thought I'd follow up on that. I used the Hushpuppy Mix I purchased and made a batch of Fried Pickles! Yumm! They really hit the spot. Super easy and super tasty!
